Winemaking
Cold pre-fermentation maceration (> 12°C) for 5 days. Alcoholic fermentation at low temperatures (18 to 25 °C) to preserve the formation of aromas. The frequency of pumping-over and delestages depends of the millesime. Hot post-fermentation maceration (28°C) for 8 to 15 days, depending of the millesime. Fermentation lasts 3 to 4 weeks in vats. Malolactic fermentation are done in inox vats.

Maturation for 14 months in barrels and vats

This Cru Bourgeois has a real past : a roman villa, a castle and its dependances from the XVIIth and XVIIIth centuries, a vineyard which can be already seen on the Masse map of 1688. The quality of this wine is worthy of his past. Shy in his presentation, it reveals fruits and pepper aromas, with strong woody flavours. The Medoc palate promises a very good bottle.

My first wine memory
My first memory of vines is from my grand-parent's house in Burgundy. It was during the harvest : i was 7 and on a horse, and my grand-father was standing near a wood barrel.

The history of the Château
The castle Beyzac is an historic property from the XVIIth century, built on a gallo-roman site. The castle was used as a prison during the revolution years (1793). The vineyards existed since the XVth century. In 1850, Féret wrote that Beyzac is a Cru Bourgeois wine, with the biggest production in the area of Vertheuil.
