Selection by hand of the fruits as they arrive to the cellar from the vineyard. Vinification is managed by parcels or identified plots of vines. Fruits are sent by gravity into the fermenting vats, adopted to the size of the parcel. All is temperature controlled automatically. The marc is taken out of the vats after fermentation or special rolling belts to preserve quality. We use a pneumatic press for this stage. Average time for fermentation is 20 to 22 days.

The history of the Château
"The true image of the great Cru Bourgeois, Château Lestage Simon, in Saint Seurin de Cadourne, a neighbour of the great vineyards of Saint-Estèphe, draws the quintessence of its complex and diversified terroir. Here, plots of deep gravels along the river, there, limestone or limestone and clay further inland.
