Vinification
thermo regulated stainless steel tanks. Pre-fermentation maceration, chilled for 72 hours at 10-12 °C. Yeast selection for alcoholic fermentation at a temperature of 26 to 28°C. Maceration of 3 to 4 weeks at a controlled temperature (27°C). The malolactic fermentation is made at 35% in a new barrels in a climate controlled cellar with ageing on lees and batonnage. Pneumatic pressing with 3 different presses.
Élevage
traditional ageing in barrels during 14 months, racking with conical wooden plug every 3 months. Putting in barrels in mild November with barrels from central France, medium toasted.

Histoire du château
The vineyard surrounding the Château is situated on one of the best gravelly hilltops to be found between Margaux and Saint Julien Beychevelle, near the river, which makes it an exceptional quality growing area with deep, well-drained soil. All the necessary elements are there: climate tempered by the proximity of the river, a noble “terroir”, proven technical input and most important, the respect and knowledge of the men who work under Stephane Derenoncourt. Without the necessary intimacy between man and nature, it is impossible to make a great wine.
