Vinification is managed by parcels or identified plots of vines. Fruits are sent by gravity into the fermenting vats, adopted to the size of the parcel. All is temperature controlled automatically. The marc is taken out of the vats after fermentation or special rolling belts to preserve quality. We use a pneumatic press for this stage. In the heart of the Haut-M\u00e9doc appellation, the 69-hectare property adjoins three prestigious representatives of the Moulis appellation : the Ch\u00e2teaux of Poujeaux, Maucaillou and Chasse Spleen. The quality of the soil, which has long been recognised as such, gave the Ch\u00e2teau du Cartillon a reputation as early as the 19th century. In 1850 this Cru Bourgeois was clearly mentioned in the first edition of the F\u00e9ret Guide. At that time the property was owned by Monsieur Alexandre de Bethmann (1805-1870) who was Mayor of Bordeaux from 1867 to 1870. It is reported in the Guide : \"located on a gravely terrain, producing one of the best wines in Lamarque\". The Soci\u00e9t\u00e9 Fermi\u00e8re des Grands Crus de France, the Grands Chais de France Group, took over the destiny of the Ch\u00e2teau in 2007.","premierSouvenir":"My first visit to Cartillon in 2007 and the magnificient view overlooking the handscape around the ch\u00e2teau with small kills made of thses incredible gravels and stones typical of great Medoc terroirs.","motDefinition":"Balanced","accordMetVin":"Agneau de Pauillac roti"},"_links":{"self":[{"href":"https:\/\/www.crus-bourgeois.com\/en\/wp-json\/wp\/v2\/chateau\/1424"}],"collection":[{"href":"https:\/\/www.crus-bourgeois.com\/en\/wp-json\/wp\/v2\/chateau"}],"about":[{"href":"https:\/\/www.crus-bourgeois.com\/en\/wp-json\/wp\/v2\/types\/chateau"}],"wp:attachment":[{"href":"https:\/\/www.crus-bourgeois.com\/en\/wp-json\/wp\/v2\/media?parent=1424"}],"wp:term":[{"taxonomy":"tri-chateau","embeddable":true,"href":"https:\/\/www.crus-bourgeois.com\/en\/wp-json\/wp\/v2\/tri-chateau?post=1424"}],"curies":[{"name":"wp","href":"https:\/\/api.w.org\/{rel}","templated":true}]}}
